Lentils for LIFE!

I’m obsessed with lentils. Especially the ones that come vacuumed sealed in the refrigerated section of Trader Joes. They are the perfect snack (or meal). They are delicious, fill me up and make me feel like I’m actually doing something good for my body. I threw this simple little salad together for a dinner party at my sister’s house. I wasn’t feeling super confident about it (because it was so simple), but everyone LOVED it and ate the whole thing up. Sometimes we’re surprised by the simplest things!

Easy Lentil Salad

What you need

  • Lentils (I like to use the pre-made ones from Trader Joes)
  • 1 Carrot, chopped
  • 1/2 Cucumber, chopped
  • 1/4 cup red onion, chopped
  • 1 clove garlic
  • Olive oil
  • spoonful of Dijon mustard
  • Squeeze of fresh lemon
  • A dash of cayenne pepper
  • Salt to taste

What you do

Put the lentils, carrots, cucumbers and red onions in a bowl. Press the fresh garlic into the bowl, add in olive oil (eye ball how much) and Dijon mustard.. Mix everything up. Squeeze in the fresh lemon juice, add a dash of salt and cayenne to taste. Enjoy!

Note: I will say that raw garlic isn’t for everyone. Leave it out if you think it will be too strong.
